Nearly two-thirds of consumers (63%) buy niche pork products at conventional grocery stores, while 53% buy them at farmers markets or food coops, 37% buy direct from local farmers, and 33% purchase from a specialty food store. The most important reasons given for buying niche pork products include healthfulness (25%), quality (14%), and flavor/taste (14%).
